sponge fingers or Savoiandi biscuits |

Method |

Whisk the egg and caster sugar together in a bowl until thick and creamy. Add the marscapone and beat well until smooth. Spread a little of the cheese mixture onto the base of a glass serving dish. Dip the sponge fingers into a mixture of the coffee and liqueur and arrange to cover the cheese mixture. Pour any remaining coffee and liqueur over the biscuits.Spread the rest of the cheese mixture on top and smooth with a spoon. Chill until ready to serve.
