Ingredients :

Fresh oysters 150gms
Fresh mussels 150gms(without shell)
Peeled divined prans 150gms
Squid ring 75gms
Red Onion 50gms
Spring onion 20gms
Baby cucumber 20gms
Fresh mnagetout 20gms
Fine chopped raw mango 25gms
Fresh cherry tomatoes 20gms
Fresh baby red chard 20gms
Fresh rocket leaf 20gms
Fresh coriander leaves 25gms

Dressing
Fresh lime juice 20ml
Salad oil 40ml
Crushed black pepper 20gms
Rock salt 10gms

Method :

1 Wash the oysters, mussels, prawns and squid, then blanch with salt and lime juice.

2 In a bowl mix all the dressing and add mix seafood

3 Add all the vegeatbles and raw mango

4 Finish with limejuice, coriander leaves and rock salt to taste.

Approx preparation time : 20 minutes

Approx cooking time : 18 minutes
