Ingredients :
Medium sized lobsters 4
White wine vinegar 4 tbs
Onions chopped 2
Spring onions (medium) 6
Green chillies 4
Ginger paste 10gms
Garlic paste 20gms
Baby spinach 2kg
Butter 100gms
Cumin seeds 5gms
Red Chilli Paste 1 tbs
Fresh Chopped coriander 2 tbs
Salt to taste
Single cream 120ml
Nutmeg powder a pinch
Crushed black pepper a pinch
Grated cheddar cheese 150gms |
Method :
Step 1
Trim the raw lobsters bring a large pan of water to
boil. Add vinegar and cook lobsters until they turn bright red. This
would take about 8-12 minutes.
Remove the lobsters from the hot water and quech them
with ice cold water to prevent excessive cooking.
Once cold split the lobster into half lengthwise,
carefully remove the meat and cut them into bite size pieces.
Wash the shell after removing the meat and place it in
a pre-heated oven for 4-5 minutes. During this period the shell would
turn darker in colour and dry out making it stiff.
Step 2
Wash the spinach leaves thoroughly under cold running water.
Bring water to a boil in a pan, blanch the spinach.
Remove the spinach from the water after half a minute
and quench it in ince cold water
Squeeze spinach dry and chop it, keep aside covered in
a dry bowl in the fridge.
Step 3
Heat two thirds of the butter in a pan, crackle the
cumin seeds followed by chopped onions.
Once the onions turn translucent, add garlic paste,
ginger paste and green chilli paste. Saute for a while continuously
stirring to prevent it from sticking to the base of the pan.
Add the pre-cooked lobster cubes to the above along
with freshly chopped coriander leaves followed by half the cream.
Add salt to taste. Bring the mix to a boil, remove pan
immediately from the fire once the mix comes to a boil.
Keep the mix aside in a clean bowl.
Step 4
Heat the remaining butter in the pan, saute the
chopped spring onions.
Add in the pre-cooked spinach along with nutmeg powder
and crushed black pepper. Mix well, saute for a minute.
Add in the remaining single cream and bring mix to a
quick boil. Remove from fire.
Place lobster shells on a baking tray
Line them with the above spinach mix
Top the spinach mix with the pre-cooked lobster mix,
further topping it with grated cheese.
Place the baking tray in a pre-heated oven at 180C for
6-8 minutes until the cheese melted and starts to turn golden brown.
Serve hot immediately. |
