Ingredients :

900g okra diagonally cut into julienne slices
2 onions sliced
150g 1 cup gram flour
2 tsp turmeric
2 tsp Kashmiri red chilli powder
Veg. Oil
2 tsp dry mango powder
1 tsp chaat masala
Salt
Juice half a lemon
Half bunch cilantro leaves.

Method :

Put okra and onions in a bowl.
Stir in gram flour, turmeric and chilli powder and mix.
Heat oil to fry to 180 degrees (350F) for cubes of bread which brown in 45 secs.
Drop handfuls of okra/onion in oil and fry until golden brown.
Remove with slotted spoon and drain well on paper towel.
Do not fry too many at once as temperature will drop and they will not crisp.
Toss with the mango powder, chaat masala and salt.
Sprinkle lemon juice and serve with sprinkled coriander.
