Beef in Oyster Sauce
Serves 4

Ingredients

30ml (2 tbsp)

oyster sauce

15ml (1 tbsp)

rice wine

5ml (1tsp)

cornflour

225g (8oz)

rump steak, lean and very thinly sliced

30ml (2 tbsp)

peanut oil

2

spring onions, cut into 2½cm (1") pieces

2½ml (½ tsp)

fresh ginger root, grated

150g (5 oz)

bamboo shoots, drained well

Method

Mix the oyster sauce, rice wine and cornflour in a bowl.

Add the sliced steak, mix well to ensure that the beef is fully covered evenly and leave to marinate for 20 minutes.

Heat a wok. Add the oil and heat until hot.

Stir-fry the spring onions and ginger for a few seconds.

Add the beef and marinade. Stir-fry until beginning to brown.

Add the bamboo shoots and stir-fry until warmed through.

Season if desired and serve.
